There’s a new name joining Edinburgh’s brilliant cocktail scene – and you’ll find this one hidden beneath the streets of the West End.
Understory is Edinburgh’s newest underground cocktail bar, tucked away within the historic vaults beneath The Rutland. Serving great drinks, great food and even better nights out, it’s a new late-night destination well worth having on your radar.
Cocktails without the fuss
At the heart of Understory is a seriously impressive cocktail programme led by renowned Edinburgh bartender Sam Baxendale, who brings more than two decades of experience behind some of the capital’s best-known bars, including five years at the helm of Bramble.
Understory even has its own drinks lab, where the team creates many of its ingredients from scratch. The opening cocktail collection, Batch 01: Halcyon Days, takes inspiration from British childhood nostalgia, penny sweets and memories of long-forgotten summers.
Alongside the drinks, there’s a playful selection of small plates and bar snacks made for sharing, from beef tartare and caviar with crisps to BBQ corn ribs and chicken tenders with Champagne.
